Finals Fuel: Earl Grey Shortbread Recipe

Maybe you’re skeptical of tea in shortbread, but I promise: you won’t be after trying this recipe.

It’s the perfect balance of sweet and savory shortbread goodness, not to mention the caffeine kick from the black tea. I’m willing to bet you already have all of the ingredients (even if you live in a dorm), and it’s doable in under an hour!

This recipe can easily be made dairy and/or gluten-free for anyone who prefers that, and I’ve included notes on the substitutions you can use (fair warning, though: a lot of shortbread’s flavor comes from dairy butter, so I can’t guarantee that the vegetable-based options will taste quite as good).

Bonus tip: if you don’t want to bake the full recipe when you first make it, just prepare it all, make the cubes, bake what you want, and freeze the rest (in an airtight container, of course)!

Now, on to the recipe!

Earl Grey Shortbread

Overview:

  • Prep Time: 30 minutes

  • Cook Time: 18 minutes

  • Serves: 6 dozen

Ingredients:

  • 1 cup confectioner’s sugar

  • 1 1/2 tbsp Earl Grey tea from tea bags

  • 1 vanilla bean (or substitute vanilla extract to taste)

  • 2 cups all-purpose flour or gluten-free flour of choice (Check if your gf flour has xanthan gum in it—if not, you might want to add ~3/4 tsp to keep the shortbread from spreading)

  • 2 sticks (1 cup) salted butter or margarine/vegetable shortening

Instructions:

  1. Preheat oven to 325ºF. Pulse sugar and tea in a food processor if you have it, otherwise just crumble tea leaves as much as you can with your hands (no big chunks of tea leaf).

  2. Split vanilla bean lengthwise and scrape seeds into food processor, or add extract. Add flour and pulse until combined. No food processor? Combine with fork or whisk.

  3. Cut butter or non-dairy shortening into chunks and add to food processor. Pulse mixture until dough just forms. If you’re working without a food processor, make the chunks extra small and combine by hand. Don’t melt the shortening! We need it to be solid and cold to get the delicious, crumbly texture of the shortbread when it’s baked.

  4. Transfer dough to lightly floured parchment-lined baking sheet. Gently pat into 1/2-inch-thick rectangle. Freeze 15 minutes. (See? Cold butter. Is. Key.)

  5. Cut rectangles into 1/2-inch cubes. Arrange cubes 1 inch apart on 2 large baking sheets lined with parchment paper or greased. Bake 18-20 minutes, or until golden on bottoms. Let cool on wire rack, make yourself a cup of tea to drink with your shortbread, and enjoy!

The James Charles Tea EXPLAINED

While this may seem like old news and pretty much everyone’s apologized to James, let’s break down how this whole mess started.

Tati’s “Bye Sister” Video That Started it All…

This is the video that started ALL the tea. The now deleted “exposé” included Tati Westbrook DRAGGING James Charles. She said that James Charles was a terrible friend since he endorsed a competitor company that sold supplements. This was something Tati took personally, because she said that James would never endorse her own supplements, and she was nothing but a loving mentor to him. She mentioned that she was with him through everything, and was a mother figure to him, yet he would barely put her on his channel or show any public support towards her. Tati also thought it was acceptable to throw in his weird obsession with straight boys, which was an accusation that caused the whole internet to blow up.

These are texts between Nikita Dragun and James Charles regarding him agreeing to post an ad for the competitor’s supplement company. This was used as evidence to counter Tati’s belief that the whole situation was premeditated, and that James knew ahead of time that he would be helping this brand rather than the last minute situation he claimed it was.

However, the main cause for this drama blowing up was the claim that James is a predator towards straight men.

People were coming out with videos supporting this accusation. One was a bicurious waiter who accused James of making him uncomfortable, the other being a bicurious boy James was talking to online for months and whom he flew out to attend Coachella with.

In the gallery above, you can see a couple of the celebrities who agreed that James Charles was making “evidently” straight men uncomfortable with DMs and comments on social media.

Here is a Buzzfeed article that lists all the celebrities that unfollowed him on social media after the outbreak of the scandal.

All of this drama has simmered down after James decided to end the accusations once and for all, causing everyone to go into actual shock. Tati deleted both of the videos she made about him, and many people have spoke up and apologized for feeding into the rumors.

Both videos have been linked but basically once you watch these you will probably be VERY confused!!!!!! I’ve come to the conclusion that James Charles has - in the past - made some straight/bicurious people uncomfortable in some ways. But there really isn’t too much hard evidence to back up that he’s a legitimate predator. A lot has been said and done, but at the end of the day, let’s not forget that people love drama - and it’s very easy to hop on the excitement of the “cancelled” culture bandwagon. :(

Tea-ology 101

Spring is finally here!  In the Windy City, seeing any bits of sun brightens our days after surviving the rainy, freezing, windy winter. With this joyful energy, spring is the perfect season to start feeling the lightness of summer. While treating yourselves with exciting plans around the city in the refreshing spring air, make sure to take care of your body a little better this quarter! Your skin and body have gone through a rough winter, and they are ready to be cleansed in order to mentally and physically get ready for summer! 

The easiest way to do this: Tea! Replacing your morning grande black coffee or your midnight double espresso shot from Ex Lib with tea would be a great way to start your easy detox program. Even if it contains some level of caffeine just like coffee, tea actually has so many more health benefits. Used for both flavor and healing purposes in the past, tea actually has the same level of power as coffee to wake you up in the morning or to help you pull up an all-nighter in Reg, while not damaging your body as bad as coffee does. Instead, drinking a cup of tea will put you in a more focused state of mind while relaxing you.

Here you can find different types of most commonly used types of tea and where you can find them on campus and in Chicago!

Black

Being one of the most caffeinated varieties of tea, black tea has a very strong awakening effect. It is said that drinking black tea might be linked to lower cholesterol levels. The most popular black tea blends are Early Grey (which has a rich aroma of bergamot oil), English Breakfast (works really well with milk) and Masala Chai (has a spicier flavor). You can find all these types in most of the coffee shops on campus such as Ex Lib, Hallowed, Cobb. If you want to go for a fancier black tea experience, you can stop by Pavilion or Palm Court Chicago at the Drake Hotel.

Green

Green tea is an excellent source of antioxidants. Studies show that drinking green tea can decrease the risk of cardiovascular disease. China green tea and jasmine tea have a more subtle flavor while matcha green tea is a more bitter kind. Plein Air and Sawada Coffee are perfect locations to spend the day while enjoying your desired version of green tea.

White

Definitely my favourite kind of them all, white tea is the healthiest option. The light and fresh flavor makes you feel so clean and immediately lowers down your stress levels. My on-campus favourites are Almond Blossom tea from Ex lib, Hallowed or Harper and Peach Blossom Tea from Dollop. 

Chamomile

Chamomile tea is made from the flowers of the chamomile plant so it is one of least-processed types of tea. You can find it in nearly every coffee shop on campus.

Lemon Ginger Tea

The lemon-ginger duo makes this type of the one of healthiest options. Drinking lemon ginger tea might be a great idea to enhance your immune system naturally. You can also find it in most of the coffee shops on campus.

Where & Wear: The Allis Afternoon Tea

I love brunch and I swear by it, but something that has always been a soft spot of mine is afternoon tea! And coming to Chicago, I realized that this was something I've continuously ignored. However, Chicago is host to many tea rooms and the Allis in the Fulton Market District is one of them!

Both a lounge and a bar, the Allis provides a relaxed yet classic atmosphere that's perfect for a girl's day out or even a date! The floor-to-ceiling windows allow for natural light to pour into the restaurant yet still keeping you warm from that cold Chicago breeze. It also has an expansive art collection to check out as well.

The Allis offers two different courses: Sparkling Afternoon Tea and Afternoon Tea. The difference between the two is actually sparkling: a glass of rose prosecco! It's light and airy and will definitely complement the array of pastries, sandwiches, and scones. I would actually recommend eating a light breakfast and even altogether skipping lunch if you're planning on afternoon tea. The finger foods can tend to fill you up and you definitely don't want to not finish them all either. The Allis also provides a variety of different loose leaf teas to choose from. However, if someone in your party is not a tea person, the Allis has Intelligentsia Coffee, hot chocolate, and even champagne!

For some outfit inspirations, I would recommend two looks: a flirty dress that screams tea-time or a chic city look that complements the Allis' modern yet cozy atmosphere.

Spring Cleaning: Get that Skin Glowing

So it is Spring… or at least I think (one can never be sure with this crazy Chicago weather), and MODA wants to celebrate! So we're bringing you a new series, Spring Cleaning, in which we explore everything from cleaning out your makeup collection to cool spring nail colors.

In this week’s  “Spring Cleaning,” we'll be sharing tips on how to give your skin that healthy natural glow it deserves, so without further ado let’s get started!

 

  • So it is tenth week… meaning that you are probably either staying up late studying for finals or enjoying some free time. Whichever it is, at one point or another your eyes are bound to get puffy from staring at a computer screen all night or not getting any sleep. Green tea bags are a must to avoid puffy eye. Green tea has caffeine, which makes the blood vessels smaller, and a chemical called tannis, which takes care of tightening the skin.
  • And last, but certainly not least, is exercise! You do you. If you do not like the idea of heading to the gym, then do what makes you happy. So long as you are active and keeping you body healthy, you have met the goal. I recommend Zumba-- a great stress reliever and social hub for you and your workout buddies.

So now that you know this, go out and make a difference in the world, but start with your wonderful and beautiful skin first!
